The food industry is discovering “that microorganisms are more prevalent and persistent than we allowed ourselves to believe,” according to Shawn Stevens of Food Industry Council. We're seeing an increased number of FDA swabathons that are regularly unearthing contamination linked to illnesses that have occurred over long periods of time. With increased testing, there’s more data to manage, and hence a greater need for electronic record-keeping and user-friendly documentation procedures. Proper documentation lies at the heart of hazard control.
